Who doesn’t love a little chocolate now and then? This virtually flourless cake is easy to prep and bakes in 15 minutes. Fast chocolate, even better! Serve with a little melted chocolate mixed with heavy cream (ganache), whipped cream and maybe a truffle or two – and you’ll be the star of the party.

16 oz. Bittersweet chocolate,
   melted and cooled slightly
1 tbs. flour
1 tbs. sugar
1 tsp. vanilla
˝ cup softened, room temperature, butter
4 eggs, separated

Preheat oven to 425 degrees. Line bottom of an 8-inch, spring form pan with a round of parchment paper.

Whisk egg yolks lightly and set aside. Beat egg whites until soft peaks. Add flour, sugar, vanilla and butter to melted chocolate. Fold egg whites into chocolate by thirds.

Gently spread batter into prepared pan and bake for 15 minutes.

Cool in pan for 5-10 minutes and remove to cool on rack.
