  Super Easy Cinnamon Coffee Cake

This coffee cake is also very versatile - try adding blueberries or chopped apples to the batter, or when putting on the topping, add some pecan halves or sliced almonds after dotting on the butter - the possibilities are endless.


 

This one doesn't last long! It's great for a quick morning treat and is even better when shared with guests or given as a hostess gift.

For the cake batter:
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 cup sugar
1/4 cup oil
1 cup milk
1 egg

Preheat oven to 350 degrees and grease an 8-inch cake pan. Mix the flour through sugar together in a bowl and add the milk, oil and egg, stirring only to combine (may be a bit lumpy like a muffin batter).

Pour into the prepared pan and top with:
1/4 cup brown sugar
3 tsp cinnamon
3 tbs butter, in small pieces

For this step, do the sugar first, then sprinkle on the cinnamon and then dot all over with the butter.

Bake for 25-30 minutes or until top is golden brown and the cake barely jiggles in the middle. Enjoy warm or at room temperature.
