|Phyllo Mini Tarts - Elegant & Easy||
These tartlets require minimum prep work and
they are a great alternative to the standard shrimp cocktail. The tart
shells can be baked and stored for a couple of days prior to your event
and the sour cream filling can be made up to a day in advance and stored
in the refrigerator.
What you need:
1 package of phyllo tart shells, 15 per box
8 oz sour cream
Zest of one lemon
2 tbs, minced fresh dill
Salt and pepper to taste
1/2 lb. 40-50 size cooked shrimp
Bake tart shells according to mfr. directions and cool on rack.
Mix together sour cream, lemon zest and fresh dill. Spoon a small amount into each tart shell and top with a shrimp - tail side up.
Serve immediately, Makes 12-15.
