|Sugared Vanilla Bean Biscotti||
Simple, elegant and very versatile, this
basic biscotti recipe is great with just vanilla and sugar, or if you
want, add toasted, chopped nuts, spices, chopped dried fruits, or dip in
2 ½ cups flour
1 tbs. baking powder
½ tsp. salt
1 cup sugar (plus more for sprinkling cut biscotti)
2 vanilla bean pods, seeds scraped
2 tsp vanilla
2/3 cup oil
Mix flour through vanilla bean seed together to combine. Add vanilla extract through eggs and stir to make sticky dough. Chill dough for at least one hour up to overnight. Pre-heat oven to 350 degrees, line a baking sheet with parchment paper and using wet hands, form the dough into two logs and bake for 25-30 minutes until lightly golden brown. Remove from oven; slide parchment and biscotti loaves off of the baking sheet. Using a serrated knife, slice into ¼ inch slices, placing them back onto the baking sheet, sprinkling with sugar and then place them back in the oven for 8-10 minutes, remove, flip, sprinkle second side and bake again for another 8-10 minutes or until the biscotti are as brown as desired.
Yields 2 ½ to 3 dozen cookies.
